With your transportation and gear covered, the next step is making sure you have mouth watering meals for your trip. That’s where we come in to help! We think camping recipes should be 1) easy, 2) require minimal clean up, and 3) delicious, so we’ve compiled a list of our favorites that cover all these bases.
Let’s start with breakfast. Our favorite camping breakfast is a Campfire Scramble. Here’s what you need:
- 8 Eggs, stirred
- 1 chopped onion
- 2 chopped peppers (your choice)
- Shredded cheddar cheese
- 2 tablespoons butter
First, melt 1 tbsp. of butter in the skillet. Next, add the onion and the peppers and cook for about 10 minutes- or until soft. Next add another tbsp. of butter. Once it melts, add the eggs and stir them up (breaking yolks). Cover the skillet and let cook for about 4-5 minutes. Add cheese on top, let it melt, serve and enjoy!
Next up: lunch. Here’s what you’ll need for Ham and Cheese Baked Potatoes:
- 4-5 medium size potatoes
- Ham deli meat
- Shredded cheese
- 4-5 tablespoons of butter
Start by slicing the potato in half both ways, but not cutting all the way through. Then, at the center, stuff in ham meat and cheese. Add one TB of butter to the top of each potato and then wrap completely in tin foil. Throw the potatoes in the fire and let cook for about 20-30 minutes. Pull potatoes out and let cool, unwrap, and enjoy!
The best camping recipes are those that let you cook everything together. That’s why, our favorite dinner recipe is Salmon and Asparagus Packets - cooked all together for your convenience. Here’s what you need:
- 20 asparagus spears, with ends trimmed
- 4 6-oz. skin-on salmon fillets
- 4 tablespoons of butter
- 2 lemons, sliced
- Salt and pepper
Place five spears of asparagus on a piece of foil. Next, lay a filet of salmon on top. Add 1 tablespoon butter on top, and two slices lemon. Use another sheet of foil the same size to cover and then secure the edges. Then, repeat with remaining ingredients until you have four packets. Either use camping stove or put the packets on hot coals of your campfire. Cook for about 10 minutes - until you see white bubbles coming through on the salmon and the asparagus is cooked through. Top with salt and pepper and enjoy!
And, last but not least, there’s perhaps nothing better than a campfire dessert. While classic s’mores always do the trick, we’re sharing another crowd favorite in case you’re in the mood to mix things up; Banana Boat S’mores:
- 4 bananas
- ½ cup chocolate chips
- ½ cup miniature marshmallows
- ½ cup of mini peanut butter cups
Place 4 10-12 inch sheets of foil on a flat surface. Place bananas on each piece of foil. Make deep lengthwise cut along inside curve of each banana, without cutting all the way through. Open slit and fill each banana with 2 tablespoons chocolate chips, 2 tablespoons marshmallows and 2 tablespoons of mini peanut butter cups. Wrap each banana in foil. Using tongs, set wrapped bananas in coals of campfire; cook 8 to 10 minutes. Carefully remove from fire; peel back foil - and enjoy!
